  • In early Maya civilizations the process of nixtamalization was distinctive in that hard, ripe kernels of maize (corn) were boiled in water and lime, thus producing nixtamal which was then made into unleavened dough for flat cakes by grinding with a handstone on a quern (metate).
  • A metate (or mealing stone) is a type or variety of quern, a ground stone tool used for processing grain and seeds.
  • There is evidence that the Hohokam, early inhabitants of the region, used and recorded the position of sunlight shining through the latter opening to mark the seasons—notably the equinoxes and the solstices, which were marked by carving a slick area (metate) in the rock.
